Sweetened ricotta cheese with berries is one of my very favorite breakfasts. Read on to see how I make it (in under 2 minutes)! This is the perfect way to use up some leftover ricotta cheese.
I tend to be the type of person who won’t spend much time on weekday breakfast – especially for myself. My sweetened ricotta with berries feels like a decadent treat, but it is easier to make than a bagel with cream cheese! Plus, it is healthier. It is full of antioxidants from the berries, and keeps you full longer since it is full of protein from the ricotta cheese. I also love that it’s a great way to use up leftover ricotta cheese.
SWEETENED RICOTTA + BERRIES VIDEO
INGREDIENTS FOR SWEETENED RICOTTA + BERRIES
- 1/2 cup ricotta cheese
- 1 tsp. sugar
- 1/4 to 1/2 tsp. vanilla extract
- Berries of your choice (or combo of berries)
HOW TO MAKE SWEETENED RICOTTA + BERRIES
Well, there’s not much to it. You just mix the ricotta cheese, sugar and vanilla extract together right in the bowl you plan to eat it in, and then gently stir in the berries.
If you don’t want to include the sugar, you don’t have to. Ricotta is slightly sweet on its own. If your berries are nice and ripe that helps too.
Seriously you guys – it doesn’t get much easier than this. Honestly, I would feed this to guests in a heartbeat. It feels so decadent and fancy. Yet it’s SO simple to make! Try it out and let me know what you think.

- 1/4 to 1/2 tsp. Vanilla Extract
- 1 tsp. Sugar (optional)
- Berries
Instructions
- Mix ricotta cheese, vanilla and sugar. Gently stir in berries and serve!
